Yams and Apples


Cooked sweet potato slices and apple wedges are baked together in a casserole with a sauce of sugar, butter, cornstarch, lemon juice, and orange juice.



Ingredients:

  • 3/4 cup Sugar  
  • 4 TBSP Cornstarch  
  • 1/2 tsp Salt  
  • 1 3/4 cup boiling water  
  • 1 TBSP Butter  
  • 1 TBSP Lemon juice  
  • 1/4 cup Orange juice    
  • 6 Yams, cooked, peeled and cut into 3/4 inch slices.  
  • 6 Apples, cored and sliced into wedges

Method

Mix sugar, cornstarch and salt together in saucepan. Pour boiling water over above and stir. Add butter, lemon juice and orange juice. Cook and stir until thickened and bubbly. Pour over yams and apples that have been layered in a large casserole dish. Bake at 350 degrees for 1 hour.

Notes: A great substitute for candied yams.
