Yam Casserole


This side dish would be great for a holiday dinner-yams baked with coconut and pineapple and topped with brown sugar and pecans.



Ingredients:

  • 4 cups mashed sweet potatoes or yams (I use yams)
  • 1 cup sugar
  • 1 stick butter
  • 1/2 cup milk
  • 1 tsp vanilla
  • 1 can coconut (2 1/2 cups)
  • 1 small can crushed pineapple with juice
  • 2 eggs
  • Topping:
  • 1 cup brown sugar
  • 1/2 cup flour
  • 1 cup chopped pecans
  • 1 stick butter

Method

Cook potatoes until tender, mash and add butter while potatoes are hot. Add coconut, eggs, sugar, pineapple, vanilla and milk. Mix all ingredients well and pour into a baking dish. Topping: Melt butter, add brown sugar, flour and pecans. Mix together and spread on top of casserole. Bake at 400 degrees for 15 to 20 minutes.

Notes: I have found it is easier to put the topping on with my fingers so I can spread it out evenly over the potato mixture.
