- Servings: 4-6
|4 cups||Mashed Sweet Potatoes or Yams, i use yams|
|1 can||Coconut, 2 ½ cups|
|1||Small Can Crushed Pineapple With Juice|
|1 cup||Brown Sugar|
|1 cup||Chopped Pecans|
Cook potatoes until tender, mash and add butter while potatoes are hot.
Add coconut, eggs, sugar, pineapple, vanilla and milk. Mix all ingredients well and pour into a baking dish.
Melt butter, add brown sugar, flour and pecans. Mix together and spread on top of casserole. Bake at 400 degrees for 15 to 20 minutes.
I have found it is easier to put the topping on with my fingers so I can spread it out evenly over the potato mixture.
