Yam Casserole

This side dish would be great for a holiday dinner-yams baked with coconut and pineapple and topped with brown sugar and pecans.

  • Servings: 4-6


4 cups Mashed Sweet Potatoes or Yams, i use yams
1 cup Sugar
1 stick Butter
½ cup Milk
1 tsp Vanilla
1 can Coconut, 2 ½ cups
1 Small Can Crushed Pineapple With Juice
2 Eggs
1 cup Brown Sugar
½ cup Flour
1 cup Chopped Pecans
1 stick Butter


Cook potatoes until tender, mash and add butter while potatoes are hot.

Add coconut, eggs, sugar, pineapple, vanilla and milk. Mix all ingredients well and pour into a baking dish.


Melt butter, add brown sugar, flour and pecans. Mix together and spread on top of casserole. Bake at 400 degrees for 15 to 20 minutes.

Helpful Tips:

I have found it is easier to put the topping on with my fingers so I can spread it out evenly over the potato mixture.
