Winter Squash with Curried Pork Stuffing

Your Thanksgiving table will come alive with the vibrant colors of acorn squash, stuffed with seasoned pork.
 

Ingredients

  • Stuffing:
  • 1 1/2 lbs ground pork
  • 1/2 cup white bread cubes cut very small
  • 1/3 cup diced Cubano pepper
  • 1/3 cup minced white onion
  • 1 heaping tbsp of curry powder
  • 1/2 tsp fresh ground cinnamon
  • 1/4 tsp fresh ground nutmeg
  • 1/4 -1/2 tsp cayenne pepper
  • 1 tsp salt
  • 1 tsp garlic salt
  • Sauce:
  • 1 cup milk
  • 2 Tbsp butter
  • 2 Tbsp flour
  • 1 Tbsp curry powder
  • 1/2 Tbsp paprika
  • 1/2 tsp salt
  • 3 acorn squash, cut in half, and seeded

Method

Score seeded halves of squashes and place upside down in a roasting pan filled with 1/2 inch of water. Bake in a 400 degree oven for 20 minutes. Combine all stuffing ingredients as for a meatloaf, and set aside. Remove pan from oven when time is up, and turn squash halves right side up. Fill squash with the pork stuffing, using about a 1/2 cup of stuffing per squash half. Place pan back in oven for an additional 25 minutes. When cook time is complete drizzle sauce over each squash, and serve remaining sauce on side. Sauce: Combine flour and butter with a fork until a smooth paste forms. Scald milk in a sauce pan. Just as milk begins to boil add spices. Add hot milk to butter/flour mixture. Stir constantly for 1 minute over low heat. Remove from heat source and whisk until sauce thickens.

 

Notes: The exotic blends of spices are an excellent accompaniment to the hearty tastes of traditional holiday dishes.
