Wild Rice with Artichokes and Mushrooms

This fix-up for a packaged long grain and wild rice mix adds interest and elegance with added artichokes and mushrooms.
Ingredients
- 1 1/4 cups water
- 1 cup chicken broth
- 1 6 1/2 oz box quick-cooking long grain and wild rice mix
- 3 tablespoons butter
- 1 4 oz can mushroom stems and pieces or slices, drained
- 1 10 oz package frozen artichoke hearts, partially thawed and quartered

Method
In a large heavy saucepan, bring water and chicken broth to a boil over high heat. Add rice and seasoning packet from mix, butter, mushrooms and artichoke hearts, then stir. When boiling, reduce heat to very low and place lid on pan. Simmer about 20 minutes, or until liquid is absorbed and rice is tender. Turn into a serving bowl, garnish with parsley sprigs, if desired. Serve hot.
Notes: I have served this as a side dish at our holiday table for years. Just added a few of our favorite ingredients to a rice mix for convenience. I rarely have any left over at the end of the meal.
