Tuscan Tomato-Bread Stuffing

Chopped fresh tomatoes, garlic and basil are added to Italian or French bread cubes and moistened with oil, chicken broth, and balsamic vinegar.
Ingredients
- 1/2 cup extra virgin olive oil
- 1/4 cup chicken stock
- 3 Tbsp balsamic vinegar
- 2 cups ripe, coarsely chopped, fresh tomatoes
- 4 cloves garlic, minced
- 1/2 tsp ground black pepper
- 4 leaves fresh basil, minced
- 1 loaf of Italian or French Baguette bread, cut into coarse 1/2 inch chunks (approx 4 cups)

Method
1. In medium bowl, mix together olive oil, chicken stock and vinegar. 2. Add tomatoes, garlic, black pepper, and basil. Set aside. 3. In large bowl, combine bread cubes and tomato mixture until thoroughly combined. (Bread should be soaked through with liquid.) 4. Bake in covered casserole at 325 to 375 degrees until heated through.
Notes: *Can add additional chicken stock, if more moisture is desired.
