Cubed turkey that been cooked with potatoes, green beans, and tomatoes with chives and savory seasonings. A great way to use up leftover Thanksgiving turkey.
 

Ingredients

  • 2 medium russet potatoes, peeled and cubed (2 cups)
  • 2 cups green beans, cut into 1 inch pieces
  • 1 tbsp olive oil
  • 1 medium yellow onion, chopped (about 1 cup)
  • 1 clove garlic, minced
  • 2 medium tomatoes, seeded and chopped (about 2 cups)
  • 1 cups cubed cooked turkey
  • 1 tbsp chopped fresh chives
  • 1 tsp grated lemon zest
  • 1/2 tsp black pepper
  • 1/4 tsp salt

Method

In a large saucepan, combine potatoes and enough water to cover. Bring to a boil over high heat. Reduce heat to medium; cook until just tender, about 5 minutes. Add green beans. Cook until tender, about 3 minutes longer. Drain potatoes and green beans in a colander. Meanwhile, in a large skillet, heat oil over medium-high heat. Add onion. Cook stirring constantly, until softened, about 5 minutes. Add garlic. Cook stirring for 1 minute longer. Add tomatoes, turkey, chives, lemon peel, pepper, and salt to skillet. Cook stirring, until heated through, about 5 minutes. Add potatoes and green beans. Cook stirring, for 3 minutes longer.
