Tom's Turkey Jerky Legs

Turkey legs are flavored with lime juice, Jamaican jerk seasoning, and dry white wine, then roasted.
 

Ingredients

  • 3 fresh turkey legs
  • 2 limes
  • 1/4 cup Jamaican jerk spice
  • 3/4 cup dry white wine
  • Ground pepper
  • 3 pats butter

Method

Place turkey legs in roaster pan. Pour wine over legs, squeeze limes over legs and sprinkle jerk spice on all sides. Place one pat of butter on each leg and a dash of ground pepper. Roast for 90 minutes in a 325 degree oven, basting every 15 minutes. If pan dries up, add wine or water. Legs should be golden brown and juicy.
