Cooked sweet potatoes are mashed with brown sugar, butter, rum, & raisins, then drizzled in a casserole with caramel topping and nuts.
Boil sweet potatoes in skins in Dutch oven. Cool until comfortable to handle and peel. Whip with a hand mixer, adding butter, sugar & flavorings; stir in raisins. Pour mixture into 2-quart casserole. Top with nuts and ice cream sauce. Serve warm.
Notes:
You can almost use this dish as a dessert.
