Sweet Potato Casserole with Pecans


A mashed sweet potato mixture with sugar, butter, eggs, milk and a little vanilla is topped with a pecan streusel before baking.



Ingredients:

  • 3 cups mashed sweet potatoes--use canned or fresh cooked
  • 1/2 cup sugar
  • 1/2 cup butter
  • 2 eggs, beaten
  • 1 tsp vanilla
  • 1/3 cup milk
  • Pecan Topping (see below)

Method

Mix all ingredients together and spread in a rectangular baking dish or pan. For Topping, combine 1 cup coarsely chopped pecans, 1 cup brown sugar, 1/2 cup flour, and 1/2 cup melted butter. Spread on top of sweet potato mixture. Bake at 350 degrees for 25-30 minutes.

Notes: This was my great-grandmother's recipe and she was very proud of it--as she should have been, since our family makes it several times a year!
