Sweet Potato Souffle

Mashed sweet potatoes mixed with sugar, eggs, butter and milk are baked and then topped with a crumb topper in this southern side dish.
Ingredients
- 3 Cups Sweet Potatoes, cooked and mashed
- 1 Cup white sugar
- 1/2 Teaspoon salt
- 2 eggs, slightly beaten
- 1/3 stick butter, melted
- 1 cup milk
- 1 teaspoon vanilla
- TOPPING:
- 1/3 cup butter
- 1 cup brown sugar
- 1/3 cup flour
- 1 cup chopped pecans
- 1 cup coconut

Preheat oven to 350 degrees. Grease a 9 x 13 pan. Mix sweet potatoes and white sugar. Add salt and eggs, stirring well. Add butter, milk, vanilla...stir well. Pour into a greased baking dish and bake for 35 minutes. Remove from the oven. Melt butter for topping and add sugar, flour, pecans and coconut, mixing well. Spread on top of the baked sweet potatoes and return to the oven for 20 to 30 more minutes.
Notes: This is an awesome dish! I got it in the south......and brought it home to the north with me! Hope you enjoy!
