Sweet Potato and Pineapple Mash

Sweet potatoes are cooked to perfection and mashed with fresh pineapple, coconut oil, salt, cinnamon and vanilla for a tasty side dish to any meal.
Ingredients
- 4 lbs sweet potatoes
- 1/2 a medium pineapple, peel and core removed
- 1 heaping tablespoon coconut oil
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract

Method
Pressure cook whole sweet potatoes with water for 30 minutes or boil for 45 minutes until soft. Drain most of the water. Cut pineapple into small pieces and add to sweet potato with the remaining ingredients. Blend with an immersion blender until smooth.
Notes: This naturally sweet dish can be served piping hot or at room temperature.
