Susan's Easy Apple Tart Recipe

Susan's recipe really is simple. Layering the apples with the puff pastry sheets and adding rum flavored eggs before baking, really sets this apart.
 

Ingredients

  • Juice and zest 2 large lemons
  • 1 pkg puff pastry sheets, thawed
  • 6 Gala or Pink Lady apples: peeled, cored and sliced into thin slices
  • 1 cup butter, softened
  • 2 cups sugar
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 4 tablespoons brandy or rum, optional

Method

Preheat oven to 350 degrees. Remove any seeds from lemon juice and add 1-2 tsp of zest. Add apples to mixture to keep apples from turning brown. Spray a large rectangular baking dish with nonstick spray. Place puff pastry sheets so they cover bottom of dish and go up each side about 1 inch from the top. Score pastries on bottom with a knife, cutting all the way through, making quite a few cuts. This keeps the puff pastry from bubbling up during cooking. Layer apples in dish. The neater the pattern, the prettier it will look when it is done. Make as many layers as you have apples. After layering, pour remaining lemon juice over apples. Mix butter and sugar together, add vanilla and mix well. Beat two eggs in a separate container, add and mix slowly. Add brandy or rum and mix well. Heat mixture in saucepan over low heat, stirring frequently, about 5 minutes. Pour heated mixture evenly over apples and bake 45-50 minutes. Place oven on broil for a few minutes to slightly brown top. Let cool before slicing.
