Acorn squash halves are filled with a mixture of ground beef, sausage, onion & garlic, flavored with sage & brown sugar, and topped with buttered crumbs.
Cut squash in half; remove seeds. Place in lightly greased baking pan and bake at 350 degrees until squash is fork-tender. Remove from oven and cool slightly. Remove some of the pulp, leaving about 1/2-inch of squash to make shell stable. Set squash pulp aside. Saute garlic & onion in olive oil until tender but not dark. Brown meat until thoroughly cooked; drain fat. Combine garlic, onions, meat, and squash pulp. Add remaining ingredients except bread crumbs & butter.
When all ingredients are mixed, divide mixture to fit in each squash half. In a small skillet combine bread crumbs with butter and place on each half. Bake the halves in a pan at 350 for approximately 25 min. or until bread crumbs are golden brown and inside of squash is heated through. Slice carefully to serve.
