Stacked and Packed Sweet Potato Towers

Delicious slices of sweet potatoes are placed in muffin cups with cheese, cream and seasonings, then baked and stacked. A beautiful presentation for an elegant meal.

2 Medium Sweet Potatoes, peeled and thinly sliced
1 cup Shredded Gruyere Cheese
⅔ cup Heavy Whipping Cream
2 tb Shallots, minced
1 clove Garlic, minced
½ tsp Salt
¼ tsp Pepper
¼ cup Shredded Parmesan Cheese
½ cup Crushed Italian Seasoned Croutons
2 tb Butter
Parsley, for garnish


Preheat oven to 375 degrees. Spray 12 muffin cups with cooking spray. Place two slices of sweet potato in the bottom of each tin. Sprinkle sweet potatoes with gruyere cheese. In a small bowl combine cream, shallots, garlic, salt and pepper; microwave for one minute. Pour cream mixture over cheese in each tin. Top with another slice of sweet potato in each tin. Sprinkle with parmesan cheese then croutons and a dot of butter. Cover with foil and bake for 30 minutes. Let cool 10-15 minutes. To serve, remove one sweet potato tower from the tin and place on a plate. Top with a second sweet potato tower and sprinkle with parsley.
