Selina's Sweet Potato Pie

Mashed sweet potato is combined with sugar, milk and eggs, and seasoned with nutmeg and lemon extract, to make the filling for this Thanksgiving pie.
 

Ingredients

  • 5 medium sweet potatoes
  • 6 teaspoons (2 Tbsp) butter
  • 2 cups sugar
  • 1/4 teaspoon lemon extract
  • 1/2 teaspoon ground nutmeg
  • 2 large eggs, beaten
  • 1/2 cup milk, divided (use 1/4 cup now and 1/4 cup the next morning)
  • 1 frozen prepared pie crust

Method

Peel and boil potatoes until done and can be easily mashed with a fork. Drain off water; mash and mix in butter while potatoes are still hot. Stir in sugar, lemon extract and ground nutmeg. Mix in eggs and 1/4 cup of the milk, using a mixer on low to medium speed; beat for 2 minutes. Let mixture sit, covered, in refrigerator overnight. Stir remaining milk into sweet potato filling the next morning. Let pie crust thaw about 10 minutes, then pour filling into pie crust. Bake at 350 degrees for 1 to 1 1/2 hours until set. Let pie cool before serving.
