Savory Sweet Potato Casserole

This mashed sweet potato mixture is livened with jalapeno peppers. It also has cream of chicken soup, cheddar cheese, eggs and mayo, and is topped with crushed crackers.
Ingredients
- 6 large sweet potatoes
- 1 medium onion, finely chopped
- 4 fresh jalapeno peppers, seeded and finely chopped
- 1/4 cup butter
- 2 eggs, beaten
- 1/2 cup mayonnaise
- 1 can cream of chicken soup
- 1 cup shredded cheddar cheese
- 1 tsp salt (or to taste)
- Topping:
- 20 crushed buttery crackers
- 3 tbsp butter

Scrub sweet potatoes and place in a foil-lined baking pan. Bake at 400 degrees, about an hour, or until soft. Let cool and remove skins. Saute jalapenos and onion in butter until softened. In large mixing bowl, combine sweet potatoes, sauteed onions and jalapeno peppers, eggs, mayonnaise, soup, cheese and salt. Mix until well blended then place in greased 3-quart casserole dish; sprinkle crushed crackers on top. Dot with 3 Tbsp. butter and bake at 350 degrees for 45-55 minutes.
Notes: I was looking for something different than the usual sweet potato casserole. After some trial and error, I came up with this, and everyone I've served it to loves it.
