Here's a great way to sneak cauliflower into your kids' diet. Just cook and mash with potatoes!
Ingredients
- 3 lbs baking potatoes, peeled and quartered
- 1 lg head cauliflower, cut into
- florets
- 1/4 C each skim milk and
- butter or margarine (I use soy milk and margarine)
- Kosher salt and pepper

Place potatoes in a large pot and cover with cold water. Sprinkle 1 tablespoon salt into water. Bring to a boil, reduce heat, and simmer, covered, just until fork tender. Drain well and mash. Meanwhile, in another pot, bring 1 1/2 cups water to a boil and add cauliflower. Return to boiling, reduce heat, and simmer, covered, until very tender. Drain well and cool slightly. Place in blender, in batches, if necessary, with milk and margarine; cover and blend until smooth. Combine both mixtures and season with 1 tsp salt and 1/2 tsp pepper. Serve.
Notes: My kids were no different than others, hated vegetables, but would eat potatoes. Out of necessity, I created these low-fat, delicious mashers which have become a family must at all holidays and birthdays. In fact, my daughter had me give the recipe to the caterer at her wedding and we served them at the reception!
