Roasted Brussels Sprouts with Bacon

Brussels sprouts are skillet "roasted" with garlic in bacon drippings, then cooked in turkey stock or broth and sprinkled with crumbled bacon to serve.
 

Ingredients

  • 1 lb fresh Brussels sprouts
  • 4-6 strips smoked bacon
  • 2-4 cloves garlic, sliced thin
  • Salt and pepper, to taste
  • 1/2 cup turkey stock
 
Method

Wash, trim and quarter Brussels sprouts; set aside. Cook bacon in a 10-inch skillet. Remove bacon, reserving about 2 tablespoons bacon fat in skillet. Drain and crumble bacon; set aside. Saute garlic in bacon fat in pan. Add sprouts and cook until they begin to brown. Add salt, pepper, and broth; simmer until liquid has reduced about half, about 5 minutes. Sprinkle with crumbled bacon and serve.

 

Notes: May be made ahead and reheated.
