Really Gooey Candied Sweet Potatoes

A baked sweet potato casserole with brown sugar, honey and maple syrup--this one is sure to be a hit at your next holiday dinner.
 

Ingredients

  • 4 - 6 large sweet potatoes (about 4 pounds)
  • Cooking oil spray
  • 2 cups dark brown sugar
  • 1/2 cup honey
  • 1/2 cup real maple syrup
  • 1 stick butter, cut into small pieces

Method

Fill an 8 quart stock pot with water and bring to a boil. Boil potatoes about 20-30 minutes until just tender, but still a little undercooked because you will bake them again. Remove potatoes from pot and run under cold water to cool. Remove the skin and slice into 1 inch thick rounds. Spray 2 baking pans (9 x 13 x 2) with cooking oil spray. Put potato slices in the pans, it is OK to overlap them. Sprinkle with the brown sugar, drizzle with the honey and maple syrup and dot with butter pieces. Bake at 400 degreews F for 20 minutes. Remove from oven and baste with the sauce in the pan. Reduce heat to 350 degrees F and continue to bake for another 20 minutes. Remove from oven and baste, then bake another 20 minutes.

 

Notes: The more you baste the potatoes the better they get--when done they will taste like candy. My mother was known far and wide for this dish and now I continue to make it.
