Pumpkin Cheesecake Pie


A blended filling of pumpkin, cream cheese, eggs, cream, Splenda brown sugar and seasonings is baked in a pie plate and chilled.



Ingredients:

  • 3 eggs
  • 8 oz. cream cheese, cubed and softened
  • 1/2 cup heavy whipping cream
  • 3 Tbsp. brown sugar Splenda
  • 1/2 tsp. each maple extract and vanilla extract, and rum (if desired)
  • 2 cups canned pumpkin
  • 2 tsp. pumpkin pie spice

Method

Blend all ingredients in blender until well mixed. Pour into 9-inch pie plate that has been sprayed with butter-flavored cooking spray. Bake at 350 for 30 minutes or until a knife comes out clean. Chill for two hours before serving.

Notes: This is great for holiday entertaining.
