Potato and Carrot Casserole

Potatoes and carrots are layered with lots of Swiss cheese and cream for this rich side dish.
Ingredients
- 1 stick of butter
- 6 to 7 c potatoes, peeled and cut into 1/8 pieces
- 4c carrots, cut into 1/8 inch slices & lightly steamed until crisp-tender seasoned salt
- 1 1/2 c grated Swiss cheese
- Freshly ground pepper
- 2 C heavy cream

Method
Pre-heat oven to 300. Grease a medium size baking dish. Layer the potatoes, carrots, seasoned salt, pepper and cheese. Dot with butter in between layers (use the whole stick). Pour cream slowly over the layers. Place in oven, bake for 1 1/4 hrs.
Notes: The Casserole is done when the cream has been absorbed and the top is lightly browned.
