Plum sauce, orange marmalade, ginger and brown sugar makes a sweet sauce for this baked sweet potato and pineapple dish.
Peel potatoes and cut into chunks (similar in size to pineapples); boil until almost soft. Cut red onion into 1 inch pieces. Arrange pineapple, potatoes and onion in 9 x 13 baking dish. Saute garlic and ginger until soft. Add all wet ingredients to pan and bring to a boil. Reduce liquid to 1/2 in about 10 minutes, stirring frequently. Pour over potato mix. Bake in 400 degree oven for 20 minutes or until caramelized.
