Perfectly "peared" Turkey Lettuce Wraps

A delicious, Asian-influenced recipe for leftover turkey that transcends the usual hash and sandwiches. Almost everyone loves lettuce wraps, and this is no exception. Fresh and healthy, quick and easy!

  • Servings: 4 main dish; 12 appetizer
  • Prep Time: 15 minutes
  • Cook Time: 10 minutes
  • Total Time: 25 minutes


2 cups Finely Chopped Cooked Turkey
⅓ cup Hoisin Sauce
1 Tbsp Toasted Sesame Oil
1 Tbsp Minced or Grated Fresh Ginger
½ tsp Dried Red Pepper Flakes
2 Ripe But Firm Pears, peeled, seeded and chopped
Juice & Grated Zest of 1 Fresh Lime
Salt & Freshly Ground Black Pepper, as desired
12 Large Iceberg or Butter Lettuce Leaves, well chilled
¼ cup Walnuts, chopped and lightly toasted
¼ cup Shredded Carrots
2 Tbsp Mint Leaves, julienned


Place turkey in a medium saucepan over medium heat; add hoisin sauce, sesame oil, ginger and pepper flakes, stirring constantly until heated and well blended.

Remove from heat; add pears, lime juice and zest, stirring well. Season with salt and pepper, as desired.

Fill lettuce leaves with warm turkey mixture; top with nuts, carrots and mint leaves.

Yield: 4 main dish or 12 appetizer servings.

Helpful Tips:

This recipe is quite adaptable. A great use for leftover turkey, using easy-to-find items that are likely on hand. There’s something magical about a warm, spiced filling inside crisp, cold lettuce leaves –- loved by young and old alike (be sure to serve with plenty of napkins)!
