Peach and Ginger Glazed Cornish Game Hens

This dish makes a great presentation and is perfect for a nice occasion. The glaze makes a nice finishing sauce and creates a great flavor.
 

Ingredients

  • 4 Cornish game hens
  • For hens:
  • 1 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 4 tbsp extra virgin olive oil
  • For glaze:
  • 1 18 oz jar peach preserves
  • 1/2 cup orange juice
  • 3 tbsp apple cider vinegar
  • 2 tbsp butter
  • 1 tbsp ground ginger
  • 1/4 tsp salt

Method

Preheat oven to 375 degrees, pat Cornish hens dry and brush each with 1 tbsp of olive oil. Combine salt, black pepper, garlic power and paprika in a small bowl. Season the hens well inside and outside with seasoning mix. Place hens on baking sheet or roasting pan making sure to allow some space between each hen so they will brown evenly. Bake 30 minutes. While hens are roasting, mix together all glaze ingredients in a small saucepan. Bring glaze to a boil and then lower heat to a simmer. Let the glaze simmer until thickens slightly and becomes syrupy, should coat a spoon, about 20 minutes. After 30 minutes of roasting, brush glaze onto hens three times every 10 minutes. Continue roasting hens until juices run clear, about 55-60 minutes. Use any leftover glaze as sauce at the table. If glaze thickens too much for a sauce, just add some more orange juice until it reaches the consistency you want for a sauce.
