
Rolled oats, chopped dried cranberries and pecans, plus a little orange juice, make these crisp cookies a nice addition to the autumn season.
Heat oven to 350 degrees. Spray a large cookie sheet with non-stick cooking spray. In a large mixing bowl cream together shortening and sugars on medium speed. Beat in egg, orange juice, and vanilla. Sift soda, flour and salt together in a medium bowl.
Gradually beat into first mixture. Stir in oats, cranberries, and pecans. Chill for one hour. Roll into 1-inch balls. Place 2-inches apart on prepared cookie sheet. Flatten slightly. Bake for 12-15 minutes until golden brown. Cool slightly before removing from cookie sheet.
