Orange Sweet Potato Stuffing

A new twist on a holiday tradition--seasoned mashed potatoes with oranges and carrots.
Ingredients
- 1/2 cup minced yellow onion
- 1 medium size carrot, peeled and diced small
- 1/2 cup butter
- 2 cups hot mashed sweet potatoes
- 2 eggs, lightly beaten
- 2 cups sale bread crumbs
- 1/4 cup minced celery leaves
- 3 oranges, peeled, seeded, sections and coarsely cut up
- 1 tsp finely grated orange rind
- 1/2 tsp salt
- 1/2 tsp rosemary
- 1/8 tsp ground sage
- 1/2 tsp freshly ground black pepper

Method
In a skillet over medium heat, saute onion and carrot in butter for 5 minutes until onion is pale golden. Reduce heat and stir fry for 2 or 3 minutes longer until carrot is tender crisp. Beat sweet potatoes and eggs together until light and fluffy, mix in onion, carrot and all remaining ingredients. Add salt and pepper to taste.
