Orange Glazed Turkey breast

If you are looking for something different to do to your turkey for Thanksgiving this year, try this orange infused recipe.
 

Ingredients

  • 2 1/2 lbs frozen turkey breast, thawed
  • 2 small cloves garlic, peeled, quartered
  • 1 tbsp butter or margarine, melted
  • 1 tsp dried tarragon leaves
  • 1 cup dry white wine or water
  • 1/4 cup orange marmalade
  • 1 tsp Dijon mustard
  • 2 apples, cored, unpeeled
  • Oranges, sliced for garnish

Method

Remove skin from turkey breast with a sharp knife and make 8 slits over surface. Insert a piece of garlic into each slit, brush turkey with the butter and sprinkle with tarragon. Place turkey on roasting pan rack, add wine to pan and cover turkey with foil. Roast at 325 degrees F. for 1 1/4 to 1 1/2 hours or until a thermometer inserted into thickest portion of breast is at 170 degrees F. Pour juices into a shallow skillet and bring to a boil. Meanwhile, cover turkey to keep warm. Boil juices until reduced to a thick and skiny glaze. Whisk in the marmalade and mustard, add the apples and heat until warm. Place turkey on serving platter, brush with marmalade glaze, surround with apples and garnish with orange slices.
