One Skillet Holiday Chicken and Dressing

This easily prepared holiday dish is great for any occasion and is just right topped with the apple walnut gravy.
Ingredients
- 1/2 prepared rotisserie chicken, bones and skin removed, cut into bite sized pieces
- 1 tbsp olive oil
- 1 tbsp + 1 tsp butter or margarine
- 1 cup diced onion
- 1 cup diced celery
- 1 cup diced red pepper
- 2 cloves garlic, minced
- 1 medium orange, zested and juiced
- 1/2 cup dried cranberries
- 1 6.5 oz box or bag cornbread muffin mix
- 1 egg
- 1/2 cup applesauce
- Apple Walnut Gravy:
- 1/2 cup apple cider or apple juice
- 1/2 cup chicken or vegetable stock
- 1/2 cup applesauce
- 1/4 cup walnuts, finely chopped
- 1 tbsp cornstarch
- 1 tbsp dehydrated onions
- 1/2 tsp garlic powder
- 1/2 tsp celery salt
- 1/4 tsp rubbed sage
- 1/4 tsp pepper

Method
In a large nonstick skillet, over medium heat, melt 1 tbsp butter and olive oil. Add vegetables and saute about 5-7 minutes, just until onions begin to turn translucent. Add minced garlic and cook about 1 minute. Stir in orange juice and zest, cranberries, and chicken. Mix well and cook 2-3 minutes until juice has been absorbed. In a separate bowl, combine corn muffin mix, egg and applesauce. Push meat and vegetable mixture to edges of pan to create a well in center of skillet. Add 1 tsp butter and pour cornbread mixture into well. Cover top of skillet with 1 or 2 paper towels and the lid. The paper towels will catch any condensation build up on lid. Reduce heat to low and cook, covered, 8-10 minutes. Check bread for doneness using a toothpick in several areas of bread. When all tests come out clean, bread in done. Break into chunks and combine with meat and vegetables. Top with apple walnut gravy. Apple Walnut Gravy: In microwave safe bowl, whisk together all ingredients. Heat uncovered in microwave on high for 3 minutes. Whisk well once half way through cooking.
