Nutty Baked Squash

Here acorn squash is filled with a mixture of graham cracker crumbs, pecans, butter, brown sugar, and spices and baked until tender.
Ingredients
- 2 acorn squash
- 2/3 cup graham cracker crumbs
- 1/3 cup coarsely chopped pecans
- 1/3 cup soft margarine or butter
- 3 tablespoons packed brown sugar
- 1/4 teaspoon salt
- 1/4 teaspoon ground nutmeg

Method
Heat oven to 400 degrees. Cut each squash in half, remove seeds and fibers. Stir together remaining ingredients. Spoon 1/4 of the crumb mixture into each squash half. Arrange squash halves in ungreased rectangular baking dish, 11 X 7 X 11/2 inches. Pour water (1/4 inch) into baking dish. Cover and bake until squash is tender, 35 to 40 minutes.
Notes: I microwave this recipe. First pierce whole squash with a sharp knife, in several places. Cook on high 6-8 minutes per pound. Let stand for 5 minutes. Cut in half, remove seeds. Fill with crumb mixture and microwave until hot.
