New England Indian Pudding


This traditional dessert combines cornmeal, molasses and spices (cinnamon and ginger) and is baked long and slow.



Ingredients:

  • 4 cups whole milk
  • 1/3 cup molasses
  • 1/3 cup yellow cornmeal
  • 1/3 cup brown sugar
  • 1/4 tsp salt
  • 1/2 tsp ginger
  • 1/2 tsp cinnamon
  • 1 egg, beaten
  • 3 Tbsp butter

Method

Heat 3 cups of the milk. Add molasses and cornmeal. Cook until thickened, stirring frequently. Combine and add remainder of ingredients EXCEPT the remaining 1 cup milk. Pour into a buttered casserole dish. Bake 1/2 hour at 300 degrees. Drizzle with the 1 cup milk. Bake 2 more hours. If you double the recipe, the baking time is the same. Serve with whipped cream.

Notes: This is rich, warm, earthy and satisying.
