Mom's Stuffing

Dry stuffing cubes, combined with celery, onion and mushrooms cooked in butter, are moistened with chicken broth, then stuffed into the bird.
 

Ingredients

  • 1 stick butter
  • 1 to 2 cups of chopped celery
  • 1/2 c. chopped onion
  • 1 pkg. fresh mushrooms
  • 1 1/2 cups chicken broth
  • 2 cups stuffing cubes (I use Pepperidge Farms)
  • Poultry seasoning, salt and pepper (to taste)

Method

In a large frying pan melt butter; cook onion, celery and mushrooms until somewhat soft, but not mushy. Add chicken broth. In a large bowl, place stuffing cubes; add the hot veggies and broth; mix well. Add the poultry seasoning, salt and pepper to taste. If it looks too dry, add more chicken broth so that cubes are somewhat soft, but not mushy. Stuff chicken or turkey and place in the oven. Make sure you sprinkle salt & pepper over the bird - if you bought a self-basting bird you don't need to worry. Remember to baste, if you did not buy a self-basting turkey or chicken.
