Mike's Stuffing

This turkey stuffing starts with a packaged mix and adds cooked sausage, onion, celery, mushrooms, condensed soup, and chipotle chili pepper.
Ingredients
- 1 lb. pork sausage
- 1 med. onion, chopped
- 1/2 c. celery, chopped
- 1 pkg. Stove Top Stuffing Mix
- 2 T. chopped fresh parsley
- 1/2 tsp. chipotle chili pepper
- 1 can Campbell's Cream of Mushroom Soup
- 1/2 lb. chopped mushrooms

Method
In a skillet over medium heat, cook sausage until browned. Break the sausage apart into small pieces (or use food processor.) Remove from pan; drain. In the same pan, saute onion, celery and mushrooms until tender, stirring occasionally. In a large bowl, combine stuffing mix, parsley, soup and chipotle. Mix well. Add sausage and the vegetable mixture. Stuff a turkey and bake according to turkey directions, or put in loaf pans and bake in a 325 degree oven for about 35 minutes.
Notes: The stuffing can be frozen in the loaf pans and thawed before baking.
