Use a pie pumpkin or a baking pumpkin (rather than the jack-o-lantern variety). Bake and mash with potatoes for this vegetable side dish.
Halve pumpkin and scoop out pumpkin seeds with spoon. Using sharp knife peel off skin by strips--cutting down the outside. Cut pumpkin into 3" chunks, drizzle with olive oil, and season with salt and pepper.
Lay onto a baking sheet and roast in 450 oven for 30-40 minutes until fork tender.
Peel 4 Russet potatoes, cut into chunks and boil in large pot on stove until fork tender. Remove from water.
Put equal amounts of potato and pumpkin into food processor and add just enough cream to reach desired mashed potato consistency. Add 4 pats of butter and salt and pepper to taste.
