Mashed Sweet Potatoes with Maple Cream Sauce

Cooked cubes of sweet potato are mashed with maple syrup, brown sugar and spices, and served with a sauce of whipping cream, cream cheese, and more maple syrup.
 

Ingredients

  • Sweet Potatoes:
  • 3 medium sweet potatoes, peeled and cut into small chunks
  • 4 tablespoons butter, cut up
  • 3 tablespoons brown sugar
  • 2 tablespoons pure maple syrup
  • 1/3 cup whole milk
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/2 teaspoon salt
  • 3/4 tsp pure vanilla extract
  • Maple Cream Sauce:
  • 1 1/2 cups heavy whipping cream
  • 5 tablespoons (1/3 cup) pure maple syrup
  • 2 1/2 tablespoons powdered sugar
  • 2 tablespoons cream cheese, at room temperature
  • 1/2 tsp nutmeg
 
Method

Bring a medium pot of water to a boil. Add sweet potatoes and cook about 15 minutes, or until very tender. Drain in colander; return pan to medium heat. Add butter to pan. When butter melts, add brown sugar and the 2 Tbsp. maple syrup, then let bubble. Add milk and potatoes. Mash and season potatoes with vanilla, cinnamon, nutmeg, ginger and salt. Maple Cream Sauce: Combine first 3 sauce ingredients in a heavy saucepan. Cook over medium heat, stirring constantly, until thickened and reduced by about 1/3, about 15 minutes. Remove saucepan from heat then beat in cream cheese and remaining nutmeg until smooth. Serve sauce warm over mashed sweet potatoes.
