Margarita Turkey With Gravy


This turkey breast is flavored with lime and basted with a mixture of margarita mix, tequila and triple sec as it roasts. A lightly thickened sauce is made from these same ingredients to serve with the carved turkey.



Ingredients:

  • 1-1/4 cups frozen margarita mix concentrate, thawed, divided
  • 2 ounces tequila, divided
  • 1 ounce triple sec liqueur, divided
  • 6 1/2- to 7-pound turkey breast, thawed if frozen
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • Juice and zest from 1 lime
  • 1-1/2 teaspoons cornstarch

Method

Preheat oven to 325 degrees. In a small bowl, combine 1/2 cup of the margarita mix, 1 ounce tequila and 1/2 ounce triple sec; set aside. Place turkey breast in a medium roasting pan. Rub salt and pepper over the outside and in the cavities. Carefully loosen the skin from the breast. Pour lime juice over the breast and in the cavities. Replace the skin. With a pastry brush, baste the turkey with the margarita mixture. Cook for 2 to 2 1/2 hours or until a meat thermometer registers 170 degrees, basting with the margarita mix every 30 minutes. Remove the turkey from the oven and let sit for 20 minutes before carving. Meantime, in a medium pan, mix remaining margarita mix, triple sec and the lime zest. Whisk in the cornstarch. Cook and stir until gravy has thickened. Serve over the carved turkey.

Notes: This makes an extremely moist turkey, with flavors that you probably haven't had before. This is a great way to add a twist to your holidays.
