Maple Stuffing

A savory mixture of corn bread, maple flavored sausage, celery, onion and apples.
Ingredients
- 2 packages maple sausage
- 2 boxes cornbread
- 1 cup celery, diced
- 1 large red onion, diced
- 3 large apples, diced
- 2 sticks butter
- 2 tbsp sage
- 2 tbsp fennel seeds
- Salt and pepper to taste
- 3 cans chicken broth

Prepare cornbread one day in advance. Preheat oven to 375 degrees. Crumble bread into large baking dish and set aside. Crumble and brown sausage in a fry pan. Drain and add to cornbread. Saute in same pan the celery and onion with 1 stick butter until tender. Add apples last to keep slightly firm. Add more butter if necessary. Do not drain. Add fruit/veggie mixture to cornbread pan. Season cornbread mixture with sage, fennel seeds, salt and pepper, then mix well. Add chicken broth, can by can, mixing entire pan after each can for consistency. Add as many cans of broth as necessary until stuffing is moist and sticks to back of a spoon. Bake covered for 30 minutes. Uncover and cook until browned.
Notes: Recipe can easily be doubled.
