Mandarin Orange and Rosemary Pecan Stuffing

This stuffing uses seasoned croutons, with garlic, poultry seasoning and rosemary for extra flavor. Pecans give crunch, and mandarin oranges add a juicy, sweet-tartness.
 

Ingredients

  • 1 11-oz can mandarin orange segments with their juice
  • 2 tbsp butter
  • 2 garlic cloves, minced
  • 2 tsp minced fresh rosemary
  • 1/3 cup diced green onion
  • 1/2 cup diced red onion
  • 1/2 cup chopped pecans
  • 1 tsp poultry seasoning
  • 6 cups seasoned croutons (about 10 ounces)
  • Chicken broth
 
Method

Preheat oven to 350 degrees. Melt butter in a large skillet over medium heat. Add garlic, rosemary, green onion and red onion to skillet. Saute for 5 minutes then remove from heat. Stir pecans, poultry seasoning, and oranges with their juice into skillet mixture. Place croutons in a 2-quart casserole; stir in onion mixture. Toss in enough chicken broth for desired moistness. Cover casserole; bake about 20 minutes. Remove lid and bake 10-15 minutes more to brown.
