Luscious Cranberry Mousse

A beautiful, tart mousse to serve as a salad course or as a light dessert.

Ingredients:

1 (20 Oz.) Can Crushed Pineapple In Juice
1 (6 Oz.) Pkg. Cranberry, cherry or strawberry gelatin
1 cup Water
1 can Whole Berry Cranberry Sauce
3 Tbsp Fresh Lemon Juice
1 tsp Fresh Grated Lemon Peel
¼ tsp Ground Nutmeg
1 cup Fresh Whipped Cream, or you can use cool whip
1 cup Sour Cream
½ cup Chopped Pecans

Directions:

Drain pineapple thorougly; save the juice. Add gelatin and juice to a saucepan, then add water. Bring to a boil over medium heat and stir to dissolve gelatin. Remove from heat. Add cranberry sauce, lemon juice, peel, and nutmeg. Chill until mixture thickens, 30-60 min. Add in sour cream and whipped cream. Gently fold in pineapple and pecans. Pour into a 2-quart mold. Chill until firm. Unmold onto a serving plate. Garnish with fresh cranberries and whole pecans, if desired.
