Luscious Cranberry Mousse

Ingredients:
| 1 | (20 Oz.) Can Crushed Pineapple In Juice |
| 1 | (6 Oz.) Pkg. Cranberry, cherry or strawberry gelatin |
| 1 cup | Water |
| 1 can | Whole Berry Cranberry Sauce |
| 3 Tbsp | Fresh Lemon Juice |
| 1 tsp | Fresh Grated Lemon Peel |
| ¼ tsp | Ground Nutmeg |
| 1 cup | Fresh Whipped Cream, or you can use cool whip |
| 1 cup | Sour Cream |
| ½ cup | Chopped Pecans |
Directions:
Drain pineapple thorougly; save the juice. Add gelatin and juice to a saucepan, then add water. Bring to a boil over medium heat and stir to dissolve gelatin. Remove from heat. Add cranberry sauce, lemon juice, peel, and nutmeg. Chill until mixture thickens, 30-60 min. Add in sour cream and whipped cream. Gently fold in pineapple and pecans. Pour into a 2-quart mold. Chill until firm. Unmold onto a serving plate. Garnish with fresh cranberries and whole pecans, if desired.
