Lemony Candied Sweet Potatoes


Pieces of sweet potato are baked in a syrup of sugar, cinnamon, lemon juice and butter to make this different-from-the-usual vegetable side dish.



Ingredients:

  • 3-4 large sweet potatoes or yams
  • 1 cup granulated sugar
  • 1 Tbsp cinnamon
  • 1 Tbsp flour
  • 3 Tbsp butter
  • 1/2 cup water
  • Dash of salt
  • Juice of 1 lemon (about 3 Tbsp)
  • Large strips of lemon peel

Method

Peel potatoes and slice like large homestyle french fries. Place in a shallow baking pan and toss with sugar, cinnamon, flour, and salt. Add water. Pour lemon juice over top. Dot with butter. Cut lemon peel and place on top. Cover with foil and bake 1/2 hour at 350 degrees F. Uncover and bake 1/2 hour more. Baste frequently with pan juices.

Notes: These are very popular with everyone. The potatoes are not as cloyingly sweet as with brown sugar and the lemon adds a nice touch.
