Leftover Calzone

Enjoy all the goodness of Thanksgiving in one simple-to-make calzone. Featuring turkey, stuffing, mashed potatoes, and cranberry sauce, this recipe is ideal for holiday leftovers.Ingredients
- Dough:
- 4 cups flour
- 1 1/2 cups warm water
- 1 5 tsp yeast
- 1 spoonful salt
- 1 spoonful sugar
- 1 spoonful olive oil
- 1 egg
- Filling:
- Leftover turkey
- Leftover stuffing
- Leftover mashed potatoes
- Cranberry sauce
- Leftover gravy

Method
Dough: Combine warm water and yeast, stir and set aside. Mix flour, salt, sugar and olive oil in a large bowl. Add water and yeast mixture then mix with fork until mostly combined. Knead by folding over and pushing down repeatedly for 10 minutes. If sticky, add more flour. Once nice and doughy throughout (see video) return to bowl, cover with paper towels, and set aside. Let rise 30 minutes if using regular yeast, 15 minutes if using quick rise yeast. Cover a cookie sheet with parchment paper. Roll dough out in a big circle. Layer turkey, then potatoes, stuffing and cranberry sauce on bottom half of dough circle. Make sure to leave an inch of uncovered dough along edge. Fold dough over turkey to make a half moon. Pinch together edges to make a firm seal. Scramble egg and brush over top of dough. Bake at 425 degrees 15 minutes or until just browned. Place gravy on side as a dipping sauce. Slice and serve.
Notes: This will work with any kind of leftovers but works especially well with Thanksgiving leftovers. If necessary add pasta sauce and some cheese. I've made it with hot dogs, macaroni and cheese and salsa.
