Jalepeno-Pecan Stuffing

Jalapeno peppers add spiciness to this stuffing. Pecans, raisins, and sausage also add flavor.
 

Ingredients

  • 1/2 pound spicy ground suasage
  • 1 cup chopped onion
  • 1 cup butter or margarine(can use more if needed)
  • 1 cup chopped celery
  • 1 cup chopped pecans
  • 1/2 cup golden raisins
  • 3 to 4 lbs dry bread crumbs or cornbread
  • 2 cups chichen broth
  • 1/2 cup canned chopped jalepeno peppers
  • 3 Tbs snipped fresh sage (or more to taste)

Method

Cook sausage and onions together until sausage is well done. Drain and set aside. In a large skillet melt butter and cook celery until tender. In Large bowl add all ingredients. Add sausage and onions last. Mix together well. In large baking dish, bake at 350 degrees for about 45 minutes. Serve with homemade cranberry sauce.

 

Notes: All spices such as sage, butter, and chicken broth can be adjusted depending on individual taste. Special secret for cranberries: use jalape?o juice for some of the water to add extra spice.
