Hot Milk Sponge Cake, Compote & Cream


This wonderful cake combines the great flavors of fall and should be at your next Thanksgiving to impress your entire family.



Ingredients:

  • 1 cup sifted flour
  • 1 tsp baking powder
  • 3 eggs
  • 1 cup sugar
  • 2 tsp vanilla extract, or lemon extract
  • 6 Tbsp hot milk
  • Cranberry & Bourbon Compote
  • 1 2/3 cups sugar
  • 1 orange
  • 1 lemon
  • 5 cups raw cranberries (1 1/3 lb)
  • 1 cup raisins
  • 1/2 cup bourbon
  • Maced Whipped Cream
  • 1 pint whipping cream
  • 2 Tbsp dry instant vanilla pudding mix
  • 1 tsp confectioners sugar
  • 1/2 tsp vanilla
  • 1/8 tsp ground mace

Method

Preheat Oven to 350 degrees. Hot Milk Sponge Cake: Sift flour and baking powder 3 times. Beat eggs 10 minutes. Add sugar very slowly, beating constantly. Add vanilla or lemon extract, fold in gently the flour. Add milk. Mix quickly until smooth. Turn into Ungreased tube pan or Bundt cake pan. Bake. Remove from oven and stand the cake pan, upside down, putting the center hole of the cake pan over the top of a quart long-neck glass bottle. Allow cake to cool before removing from pan. Cranberry & Bourbon Compote 1. Into a medium-large heavy duty sauce pan, place 2/3 c. of the sugar into pot. 2. Zest the orange and lemon and blend into sugar. Squeeze the juice from the orange and lemon and add to sugar mixture. 3. Mix the citrus-flavored sugar, orange and lemon juices with the remaining sugar, cranberries, raisins and bourbon. Let stand 1 hour, stirring occasionally. 4. Bring mixture to boiling over moderate heat; lower heat. Simmer 5 to 10 minutes longer until some of the berries have popped but others are still whole. 5. Place compote into clean glass jars. Compote is best served at room temperature, feel free to heat up at serving time or serve chilled. Maced Whipped Cream Whip all ingredients together until firm peaks form.

Notes: When ready to serve, slice cake and top with a generous dollop of compote. Compote is best served at room temperature. At serving time, do feel free to heat up or serve chilled, as desired. Finish off with Maced Whipped Cream. I serve this very elegant ending to our Thanksgiving meal with assorted pots of hot steeped teas, such as green tea, lemon, ginger Earl Grey; and the must-have beverage of Hot Apple Coffee in Mugs.
