Honey Glazed Acorn Squash

Here acorn squash is filled with a honey, lemon and cardamom mixture.
 

Ingredients

  • 2 medium acorn squash (about 1 pound each)
  • 1/4 cup honey
  • 1 tablespoon lemon juice
  • 1/4 teaspoon cardamom

Method

Cut each squash in half lengthwise, and discard seeds and membrane. Combine remaining ingredients. Place squash, cut side down, in a rectangular microwave-safe baking dish. (I have to do this in 2 batches.) Microwave, uncovered on 100 percent power (high) for 12 minutes, or until just tender, giving dish a half-turn once. Turn squash over, cut side up. Spoon honey mixture into squash cavities. Microwave for 1 to 2 minutes, or until hot.
