Holiday Sweet Potato Balls

Mashed sweet potato, brown sugar, butter & cinnamon, is wrapped around marshmallows, rolled in crushed cereal, & baked in caramel topping.Ingredients
- 6 large sweet potatoes
- 1 stick (1/2 cup) butter or margarine, cut up
- 1 tsp cinnamon
- 1 cup packed brown sugar
- 1 bag of large marshmallows
- Caramel ice cream topping
- 1 box of sugar-coated cereal flakes, crushed (Sugar Frosted Flakes)

Method
Boil sweet potatoes in their skins until fork-tender. Peel and mash with mixer. Add butter, cinnamon, and brown sugar. Blend well. Using lightly moistened hands or a spoon, cover each marshmallow with some of the sweet potato mixture. Roll in some of the crushed cereal and place in a shallow baking dish or pan. Drizzle with desired amount of caramel topping. Bake at 350 degrees for 20-30 minutes to melt the marshmallow and warm the topping.
