Healthy Holiday Pumpkin Bread

This bread uses pumpkin puree, wheat flour, wheat germ, yeast flakes, eggs, applesauce, & 3 kinds of sugar, and is drizzled with a powdered sugar glaze.
Ingredients
- 3 cups whole wheat flour
- 1/4 cup wheat germ
- 1/8 cup nutritional yeast flakes
- 1/8 cup oat bran
- 1 tsp baking powder
- 2 tsp baking soda
- 1 tsp EACH of cloves, cinnamon, & nutmeg
- 1/2 tsp salt
- .....
- 3 eggs, beaten
- 2 cups canned pumpkin or fresh pumpkin puree
- 2 Tbsp water (if using canned pumpkin)
- 1/2 cup unsweetened applesauce
- 1/2 cup canola oil
- 1 cup date sugar
- 1 cup white sugar
- 1 cup brown sugar
- 1 cup chopped walnuts
- 1 cup raisins
- GLAZE:
- 2 3/4 cups powdered sugar
- Zest of 2 medium oranges, divided
- Juice of 1 medium orange

Preheat oven to 350 degrees F. Spray 2 loaf pans (or 7 tiny loaf pans) with nonstick spray (or use butter). In a medium bowl stir together the first 10 ingredients. Set aside. In a large bowl beat the next 8 ingredients until well mixed.(Add the water if using canned pumpkin, omit water if using fresh pumpkin). Add dry ingredients to wet ingredients and mix thoroughly. Fold in walnuts and raisins. Divide batter evenly among baking pans. Bake for 50-55 minutes for the larger pans or until a toothpick inserted into center comes out clean. Begin checking for doneness after 40 minutes. Cool in pans for 15 minutes on wire rack, then remove and cool completely on racks. While loaves are cooling, make the glaze. Combine powdered sugar, orange juice, and half the orange zest, and whisk until smooth. When loaves are cool, place cookie sheets or wax paper under racks and drizzle glaze over loaves (still on racks), letting glaze run down the sides of loaves. Sprinkle tops of glazed loaves with remaining orange zest. Leave on racks until glaze is set.
Notes: This pumpkin bread is out of this world good and makes a great Thanksgiving dessert. I make a couple of batches using the "mini" loaf pans and give them away for holiday gifts too. This pumpkin bread freezes extremely well; gift breads can be made ahead and stored in the freezer. Wrap loaves with wax paper, secure with tape, and then wrap with foil before putting in the freezer. I have even put holiday ribbon on the foil-wrapped loaves and THEN put them in the freezer. The frozen loaves are also great when you need a quick dessert when unexpected company comes, so keep a few on hand.
