Fresh cranberries with an added zing of flavor from tangerines, ginger and a little red wine.
Bring wine to a boil over medium heat in a 4 qt heavy saucepan.
Reduce heat and simmer uncovered for 15-20 minutes, or until reduced by half (to about 1 cup).
Add remaining ingredients and simmer for 10 minutes, or until cranberries burst.
Cool and serve.
Serves 8.
Notes:
The depth of flavor in this compote is acheived by cooking the fruit in a wine reduction.
