Gingered Cran-gerine and Cabernet Compote

Fresh cranberries with an added zing of flavor from tangerines, ginger and a little red wine.
 

Ingredients

  • 2 cups Cabernet Sauvignon, or other dry red wine
  • 2 (12 oz) bags fresh or frozen cranberries
  • 2 whole tangerines, chopped, seeds removed
  • 2 Tablespoons minced fresh ginger
  • 1 1/4 cups sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
 
Method

Bring wine to a boil over medium heat in a 4 qt heavy saucepan. Reduce heat and simmer uncovered for 15-20 minutes, or until reduced by half (to about 1 cup). Add remaining ingredients and simmer for 10 minutes, or until cranberries burst. Cool and serve. Serves 8.

 

Notes: The depth of flavor in this compote is acheived by cooking the fruit in a wine reduction. It will be a hit at your next holiday gathering.
