Fruits of the Forest Yam Patties

This side dish mixes mashed yams with apple, pear, walnuts, bacon, cinnamon and egg into patties that are cooked in hot oil.
Ingredients
- 3 cups mashed, cooked yams
- 1 beaten egg
- 2 teaspoons chopped parsley
- 1/2 cup finely chopped apple
- 1/2 cup finely chopped pear
- 1/4 cup finely chopped walnuts
- 2 tablespoons bacon bits
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- 3/4 cup flour
- 1/2 cup sunflower oil
- Whipped butter
- Maple syrup

Method
Mix yams with egg, parsley, apple, pear, walnuts, bacon, cinnamon, salt and pepper, then form into flat circular patties. Coat both sides in flour. Place oil in a large frying pan and heat. Fry patties in oil, on each side, until golden brown. Serve with whipped butter and a drizzle of maple syrup.
Notes: I created this recipe especially for Thanksgiving. It has the wonderful taste of mashed yams with the crunch of fruit and nuts. Bacon adds that extra-special surprise. The drizzle of maple syrup enriches it and even kids can't turn these down.
