Excellent Spicy Microwave Turkey, Really

A boneless turkey is seasoned with garlic, rosemary and pepper, and cooked in a microwave oven.
Ingredients
- 1 frozen whole boneless turkey, about 4 pounds, thawed as package directs
- 8 to 10 large cloves garlic
- 3 Tablespoons of rosemary leaves
- 1 teaspoon of paprika
- 1 Tablespoon of coarsely ground black pepper
- 1 teaspoon of coarse Kosher-style salt
- 2 Tablespoons of olive oil
- Rosemary sprigs, for garnish, optional
- Orange slices for garnish

Method
1. Remove mesh from thawed out turkey. Lay out, flat as possible, on cutting board, skin side down. 2. Combine garlic cloves, rosemary, paprika, pepper and salt in bowl of food processor and blend. Add oil, processing until coarsely chopped 3. Spread half of the garlic mixture over the inside of the turkey. Re-roll turkey. 4. Spread outside of turkey roll with remaining garlic mixture. Wrap firmly in microwave plastic. Secure firmly with 4 or 5 pieces of string. Pierce film in two or three places with fork. 5. Place on microwave-safe cooking rack over a microwave-safe roasting pan. 6. Microwave on high power for 10 minutes. Turn roast over. 7. Microwave on medium power for 35 to 40 minutes, turning 2 or 3 times, while cooking, until temperature is 170 degrees in several places. 8. Thicken the pan juices for gravy, if desired. 9. Remove from oven. Let stand, covered, 15 minutes. Cut turkey in thin slices to serve. Garnish with orange and rosemary.
